Diabetes is a disease in which blood sugar (blood glucose) levels of the patients are high. Glycemic Index is a number that tells us the total rise in the blood sugar level of the person following the consumption of food. The number ranges From 50 to 100 where 100 number represents pure glucose. A food with high glycemic index raises blood glucose level more as compared to food with low or medium glycemic index. A diabetic patient is required to take low glycemic diet in order to maintain healthy blood glucose levels.
Diet that contain low glycemic index foods is known as low glycemic index diet. In general, the glycemic index measures that how much 50 gram of a carbohydrate raises blood glucose levels as compared to pure glucose which has glycemic index of 100. Foods with glycemic index 70 or higher are considered as high glycemic index foods while those with glycemic index of 55 or below are considered low glycemic index foods.
Foods with low GI include dried beans, legumes, non-starchy vegetables, some starchy vegetables (such as sweet potatoes, most of the fruits), many whole grain breads and cereals like barley, rye bread etc. Meats and fats don't have glycemic index as they do not contain carbohydrate in it.
Cooking - The more cooked food has higher glycemic index.
Processing - The more processed food has higher glycemic index. Juice has a higher glycemic index than fruit. The mashed potato has a higher glycemic index than whole baked potato.
Ripeness - The more ripe fruit or vegetable has a higher glycemic index than less ripe fruit or vegetable.
Variety - Brown rice has a higher glycemic index than converted long grain-white rice but short grain rice has a higher glycemic index than brown rice.
A diabetic patient will get benefit with every low glycemic index meal but it is not necessary for a diabetic patient to eat low GI foods in every meal but at least one time meal should contain low Glycemic index diet. By eating the combination of high glycemic food with low glycemic food such as high glycemic index bakery products with protein foods or low glycemic index fruit or legumes results in medium glycemic index of foods.
